This past month I’ve been getting back into cooking new recipes. I’ve always loved to cook and bake but I felt like I was getting into a rut with my “go-to” recipes. Here are the three that I tried out recently and will be adding to my recipe book:
- Overnight Oats: My breakfast routine was pretty boring. It either consisted of a banana or a breakfast/protein bar–or a combination of the two. I had heard a lot of about Overnight Oats and I wanted to give them a shot! I did some research on Overnight Oats and I found that most people used the following ingredients: old fashion oats, plain greek yogurt, unsweetened almond milk, and chia seeds. I didn’t measure out the ingredients when making the overnight oats–I just put in the amounts that I thought were appropriate! Before eating I added some honey and chopped banana.
- Butternut Squash and Spinach Lasagna Roll-Ups: I shared the final product of this recipe on Instagram Stories and I received so many Direct Messages asking what I made! These turned out absolutely delicious. I have loved using this website lately to find healthier recipes. They are perfect for the fall season and I will definitely be making them sometime soon.

Spaghetti Squash Enchilada Boats: This recipe comes from the website listed above! If you are a fan of spaghetti squash you will love this recipe. I added beans, pico de gallo, and roasted corn to the boats before serving these. This is a great carb alternative.
